Winter Recipes from Secretts
Kale with potatoes
Preparation Time: 15 Cooking Time: 40 Serves: 4
Ingredients:
400g potatoes SG
1 large onion SG
2 tbsp olive oil SG
250g kale SG
salt to taste
Instructions
Peel and steam the potatoes until tender and allow them to cool, then
cut into thick slices.
Wash and drain the kale, remove the stems and midribs. Roll them together
and shred lengthwise. Peel and chop the onion.
Heat the oil in a wok or large pan, add the onion and sauté on
a medium heat until slightly brown.
Add the kale and keep turning until it reduces down.
Add the potatoes and cook until the whole mixture is heated through.
Kale cooked with chilli and garlic
Preparation Time: 5 minutes
Cooking Time: 20-30 minutes
Serves: 4
Ingredients
400g kale leaves, stripped from main stem, washed & cut SG
2 tbsp olive oil SG
2 cloves garlic - finely chopped SG
1 fresh hot green chilli
2 dried hot red chillies
150mls of chicken stock or water.
Instructions
Heat up oil in a large pan. When hot add red chillies, when chillies start
to darken, add the garlic and stir until garlic is about to brown and
add green chillies. Stir once.
Quickly add Kale, stir fry for a minute then add stock and
bring up to a simmer. Cover and cook on a low gas for 20-30 minutes, or
until kale is tender. Remove cover and boil away most of the liquid. Season
well.
